Our main focus in our venture is, without doubt, our new tree planting and ancient tree management programme, which following a lot of land preparation has begun. In the winter of 2021/2022, we began with the planting of our first 40 trees, selecting year-old juvenile trees, which should start to produce fruit in 2 years. We have also in 2022, begun an Almond germination programme, which is difficult, very time-consuming, and often prone to failure, but we hope to be self-sufficient in providing our own saplings within 2 years.
Almonds have been suggested to reduce heart disease risk by lowering total and LDL cholesterol and exerting anti-inflammatory and antioxidant effects. Plant sterols as found in almonds may interfere with the absorption of cholesterol and bile acid, and the high amount of unsaturated fat in almonds favors an improved lipid profile, especially when this food replaces other foods high in saturated fat and refined carbohydrate. Almonds also contain phytonutrients that support the growth of beneficial gut microbes. Controlled trials have shown that general nut intake can decrease inflammation, promote healthy blood vessels, and reduce insulin resistance

Ancient Greeks were the first to grow carob trees, which are now grown all over the world. Each carob tree is single-sex, so it takes a male and female tree to produce carob pods. A single male tree can pollinate up to 20 female trees. After six or seven years, a carob tree is able to produce pods. Once a female carob tree is fertilized, it produces hundreds of pounds of dark brown pods filled with brown pulp and tiny seeds. The pods are about 1/2 to 1 foot in length and about an inch wide. People harvest pods in the fall.
